Today I'm sharing something I REALLY REALLY have been enjoying during lockdown - baking. I'll admit I always loved baking but never really had time - I was always running from work to home to school pick up and on weekends I was way exhausted to even think about it. But with lockdown, I was forced to slow down a bit .. and working from home some days in the week also helped a lot.
And boy I was glad I did! I fell in love with how easy and yummy this mix is. A total winner. I have made the mix as instructed to make It look like a genuine pot brood like in the picture - but I made a few little adjustments to make it easier for myself. I'll explain both methods here as well. While I love how big the slices the original way of making it is - I found it easier to split the batch in two instead. This way it makes two loaves instead of one.
Use the Eurika Mills Premix
It includes a sachet of yeast that you mix into the dry ingredients
Add750 ml of water
Let rise for an hour
and bake.
As easy as that.
I prefer to let my two loaves rise in front of a heater in winter - because let's be real some days have been FREEZING.
I use a little butter and sprinkle some mixed herbs on top before I put mine into the oven - but you can add in some grated cheese, yummy biltong or mixed herbs into the mix as well to make a savoury loaf.
I pay around R36 for my pack - and as I mentioned I split it up in two loaves that last a few meals a week. Plus it's fantastic to eat plain with a little butter as well - super yum! Plus I discovered baking is really really good for my soul.
